Fortunate to benefit from a rich and diversified terroir, the chef feeds off daily arrivals to create a menu of richly flavored suggestions with a southern accent. Fish, lobster, carpaccios, ceviches based on local catch, fisherman's plates, fish soup or Sophia's famous bouillabaisse. Meat lovers will appreciate our selection of Charolais, Black Angus and foie gras. You'll also be delighted by our menu favourites such as fresh marinated anchovies, peppers in oil, green stuffed sardines and "Ninette" salad. Sweet treats include tarte tropézienne, homemade sorbets and Natsuc sugar-free desserts. Natsuc, www.natsuc.com, a natural, plant-based birch bark sugar substitute, offers uncompromising pleasure for your health. This natural sugar enhances every dessert with a touch of healthy sweetness. ecause your well-being is important to us, we make every meal a tasty and balanced experience.
And let's not forget the estate's wine, "Clos Bellevue", the fruit of a biodynamic, entirely hand-harvested harvest, and the estate's olive oil, also from "Clos Bellevue". Produced according to tradition - olives harvested before ripeness to preserve optimal flavor, first cold pressed, unfiltered and naturally decanted - this oil is a treasure for connoisseurs.
